Family Favourite Orange, Basil and Honey Chicken Wings
Making meals suitable for everyone in the family can sometimes be a challenge even right down to how that chicken is cooked :)… a mix of herbs and spices help to get those awesome flavours right out.
This quick simple recipe features a tasty blend on chicken wings which the family can have as part of snack time or part of a main meal…
Ingredients
- Bag of chicken wings- cleaned (alternatively use chicken drumsticks)
- Pack of cherry tomatoes (rinsed in warm water)
- Few spring onions (chopped)
- One sweet orange
- Olive oil (1 tbsp.) for drizzling
- Honey ( for glazing- optional)
- One fresh lemon or lime
- For Herbs, Spices & Seasoning (HSS)- 1 tsp. Curry powder, 3 sprigs of fresh Thyme, few fresh Basil leaves, ½ or 1 tsp. Parsley, ½ or 1 tsp. Coriander, little cut garlic & ginger (crushed together), sea salt, black pepper (alternatively, use little scotch bonnet for added heat)
Method
- On a clean oven tray, cover with foil and drizzle very little olive oil
- Place the chicken on the tray, add chopped spring onions, and the cherry tomatoes
- Blend the following: Basil leaves with a good squeeze of fresh orange juice, orange rind, garlic, ginger, scotch bonnet (optional) to form a liquid mix
- Pour over the chicken
- Then add the fresh thyme, parsley, coriander, curry powder black pepper, sea salt
- Sprinkle fresh lemon or lime over the chicken
- Place in a pre heated, fan assisted oven at 180 oC for at least 15mins
- Check after 15mins, drizzle some clear honey and change oven to grill and allow to grill for another 10mins for that added crunch to the chicken 🙂
