Also known as ‘Toad in a Hole’, Eggs in a Blanket is a classic savory breakfast. All you need is eggs, toast and oil. Use thick cut toast and cut a whole from the center about 2 inches in diameter. Heat your oil or butter in a skillet over Medium heat until bubbling. Place the bread on the skillet and crack an egg inside. Add a pinch of salt and pepper. Allow each side to be golden brown, flipping carefully. Children love this breakfast since the egg in the center feels like a treat.

Another idea is to prep your breakfast the night before. Some breakfasts don’t do well being reheated, but oatmeal is a food that actually tastes better after being re-warmed. You can also create a version that tastes great cold. Throw together a few healthy ingredients the night before and save yourself from any preparation in the morning. Combine ¾ cup non-fat milk, ½ cup of old fashioned oats, ⅓ cup of fruit, 1 tsp brown sugar, ¼ tsp lemon zest, ⅛ tsp vanilla extract, 3 drops of pure almond extract and a pinch of salt in a mason jar or any container with a lid. If you can’t go without satisfying a morning sweet tooth, this last recipe will leave you full of joy. Create a delicious Organic Honeycrisp that can be whipped up in just 2 minutes and baked in 3. For a single serving, melt 3 tbsp of coconut oil and stir in ¼ cup quick oats, 2 tbsp chopped pecans, 2 tbsp whole wheat flour, ½ tbsp sugar, ¼ tsp cinnamon and a pinch of salt. In a separate bowl toss 2-3 chopped apples with ½ tbsp whole wheat flour, ½ tbsp sugar and ¼ tsp cinnamon. Layer the oat mixture at the bottom of 2 ramekins. Next put a layer of the apple mixture next and top again with the oats. Pop these in the microwave for 3 minutes and 30 seconds. You can also do all of the prep for these tasty treats the night before, just cover the top of each ramekin with saran wrap to keep them fresh.
